Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 cup sharp cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 1/4 cup butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 3 cups cooked pasta or cooked rice

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Melt the butter in a saucepan over medium heat.
  • Add the flour and whisk for 1 minute to create a roux.
  • Slowly pour in the milk while whisking continuously until thickened.
  • Remove from heat and stir in the cheddar and Monterey Jack cheeses until fully melted.
  • Add garlic powder, onion powder, salt, and black pepper.
  • In a large bowl, combine the shredded chicken and cooked pasta or rice.
  • Pour the cheese sauce over the chicken mixture and stir well.
  • Transfer to a greased casserole dish.
  • Bake for 30 minutes until bubbly and lightly golden.
  • Let rest for 5 minutes before serving.

Notes

  • Add broccoli, peas, or spinach for extra vegetables.
  • Top with crushed buttery crackers for a crunchy finish.
  • Substitute cauliflower rice for a lower-carbohydrate version.
  • Rotisserie chicken works well for a faster preparation.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) or in the microwave until heated through.
