- 2 tablespoons olive oil
- 2 large onions diced
- 3 cloves garlic minced
- 2 tomatoes chopped
- 500 g chicken breast or beef cubed
- 2 carrots sliced
- 2 potatoes diced
- 1 cup rice or noodles
- 6 cups beef or chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley chopped
Heat olive oil in a large pot over medium heat.
Sauté onions until softened and lightly golden.
Add garlic and tomatoes; cook for 3–4 minutes.
Add chicken or beef and cook until lightly browned.
Pour in broth and bring to a boil.
Add carrots, potatoes, rice or noodles, salt, pepper, and paprika.
Reduce heat and simmer for 30 minutes until meat and vegetables are tender.
Stir in fresh parsley.
Taste and adjust seasoning if needed.
Serve hot.
