Ingredients
  

  • 2 tablespoons olive oil
  • 2 large onions diced
  • 3 cloves garlic minced
  • 2 tomatoes chopped
  • 500 g chicken breast or beef cubed
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 cup rice or noodles
  • 6 cups beef or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onions until softened and lightly golden.
  • Add garlic and tomatoes; cook for 3–4 minutes.
  • Add chicken or beef and cook until lightly browned.
  • Pour in broth and bring to a boil.
  • Add carrots, potatoes, rice or noodles, salt, pepper, and paprika.
  • Reduce heat and simmer for 30 minutes until meat and vegetables are tender.
  • Stir in fresh parsley.
  • Taste and adjust seasoning if needed.
  • Serve hot.
