1 cup dry orzo rice-shaped pasta 2 cups chicken beef, or vegetable broth 1 –2 tablespoons olive oil 1/2 cup finely chopped onion 1 –2 garlic cloves minced 1/4 cup grated Parmesan cheese 2 tablespoons chopped fresh parsley 1 teaspoon lemon zest optional Salt to taste Black pepper to taste Optional Add-ins 1 pound ground beef chuck 2 cups cooked shredded chicken 12 ounces chicken sausage 1 pound shrimp 1 salmon fillet Spinach cherry tomatoes, feta cheese, roasted vegetables
Toast the dry orzo in a skillet over medium heat for 2–3 minutes until lightly golden.
Add olive oil and sauté onion until translucent.
Stir in garlic and cook for 30–60 seconds.
Pour in broth and bring to a simmer.
Cover and cook for 10–12 minutes until the liquid is absorbed and the orzo is tender.
Remove from heat and stir in Parmesan cheese.
Add parsley, lemon zest, salt, and pepper.
